The Delicious Carrot Cake That Drew Steals a (Big) Slice Of

What you need:

– About 300 grams of flour

– About 1 teaspoon of baking soda

– A pinch of salt

– A sprinkle of cinnamon

– Some vegetable oil (because nothing ever goes well without lube *nods sagely*)

– A big-ass glass of wine – this one you just drink, not use for the cake…this baking thing is exhausting!

– About 200 grams of brown sugar

– Some vanilla extract (because come on, some vanilla makes the spicier stuff feel all the better xDD)

– About 5 eggs

– 6 medium carrots, peeled

– You can add some nuts (because they always make it more fun, right?); I don’t really add nuts myself, because I’m the nuttiest creature I know, so… you know :D

– Some powdered sugar to sprinkle over the baked stuff, because pretty factor makes yummy, right?

– It’s cool to scream obscenities at this point, and have a second glass of wine. I hate baking, did I mention that? Lol!

Let’s get this thing done:

– Heat the oven (let’s make this hot!)

– Lube up your cake pans nice and slippery (Yep. You just read that. I’m on my two-and-a-half glass of wine here – what did you expect? Mwahahaha!)

– Blend the flour, baking soda, cinnamon.

– Mix the lube – oil, I mean oil – with the sugar and vanilla, then add in the eggs and blend that stuff up until your hand hurts. That’s the international signal for a good job in the kitchen, by the way: hurting hand. It’s either that or your family running out of the house screaming, while sexy men carrying a thick hose come over.

– Mix the stuffs up. I need more wine. Add the carrots, by the way – and go nuts with the…nuts – if you’re adding any nuts. Do add the carrots, though. A carrot cake without carrots kind of defeats the purpose, right? *drinks more wine*

– Divide into 2 pans, we’re gonna sandwich – I mean, use a layer of cream between them. Eheh. Bake for like 40 minutes, or until it looks nice and fluffily done.

For the sandwich – I mean the creamy stuff in the middle, you need:

– Some cream cheese

– Some whipped cream

– A bit of lemon juice or lemon zest – or both. There can never be enough lemon in anything, even a carrot cake.

Mix the stuff and let it rest in the fridge. You know you’ve got it right if a family member keeps mysteriously opening up the fridge and leaving the scene of the crime sporting a lemon-y scent. What, that stuff only happens at my house? I’m the one who tends to be the guilty party, btw – but shhht, I always blame someone else! But I digress.

Put the creamy stuff on one part of the baked cake, add the other part on top. If you’ve got any cream left, you can slap some on top of the cake too, and then add powdered sugar over it. Or just go with the sugar and eat whatever cream is left – perks of the chef, all right? Shhhht!

And voila – enjoy!

P.S.: Liberal amounts of white wine were consumed during the making of the cake, and the writing down of the recipe. If anything goes wrong, it’s your fault for not doing it right – ahahahaha. Kidding. You just need to have more wine – nothing tastes truly bad if you’ve had enough wine, right?
